Now, as our esteemed Pastry Chef, Eddie has introduced a range of new recipes and launched a line of desserts that have become a hallmark of O'Brien's. His exquisite pastries are featured daily at O'Brien's Cafe, showcasing his exceptional talent.

Juan Carlos, originally from Guatemala City, began his baking career in San Diego after immigrating to the U.S. at 18. He refined his craft during two decades at Parisian Bakery before joining O'Brien's Boulangerie, where he trained under the previous owner, Jim O'Brien. In 2006, when his brother Edgar Escobar took over the bakery, Juan Carlos became the Head Baker, ensuring the continuation of O'Brien's renowned quality.
