Head Baker
Juan Carlos is a native of Guatemala City, where he spent his formative years before immigrating to the United States at the age of 18. In the early 1980s, he secured his first job in San Diego at a local bakery, setting the stage for a career in the baking industry.
In pursuit of his passion, Juan Carlos eventually made his way to Parisian Bakery, where he honed his skills for two decades. His commitment to his craft and dedication to the art of baking did not go unnoticed, and he soon found himself at O'Brien's Boulangerie, where he worked under the tutelage of Jim O'Brien, the establishment's previous owner.
In 2006, Juan Carlos' brother, Edgar Escobar, took over ownership of O'Brien's Boulangerie. With his extensive experience in the industry, Juan Carlos was the natural choice to assume the position of Head Baker. Drawing upon his years of expertise, he oversaw the bakery's production operations, ensuring that the establishment continued to produce the same high-quality baked goods that it had become known for.
