Eddie Escobar Master Pastry Chef
Eddie's upbringing was marked by the presence of his father, who worked as a baker, and the rest of his family who operated a family-owned bakery. At the age of 24, Eddie developed an interest in baking and began training in pastries & desserts. Through dedicated effort and discipline, he achieved mastery in the art of baking. It was during this time that Eddie's passion for pastries and desserts was ignited, leading him to become our esteemed Pastry Chef.

Eddie's impact on the culinary offerings at O'Brien's has been significant. He has successfully introduced a range of new pastry recipes, and launched a line of delectable desserts that has become a hallmark of the establishment. Eddie's exquisite pastries are prominently featured in the O'Brien's Cafe on a daily basis, a testament to his expertise and talent in the realm of pastry-making.


Juan Escobar Head Baker
Juan Carlos is a native of Guatemala City, where he spent his formative years before immigrating to the United States at the age of 18. In the early 1980s, he secured his first job in San Diego at a local bakery, setting the stage for a career in the baking industry.

In pursuit of his passion, Juan Carlos eventually made his way to Parisian Bakery, where he honed his skills for two decades. His commitment to his craft and dedication to the art of baking did not go unnoticed, and he soon found himself at O'Brien's Boulangerie, where he worked under the tutelage of Jim O'Brien, the establishment's previous owner.

In 2006, Juan Carlos' brother, Edgar Escobar, took over ownership of O'Brien's Boulangerie. With his extensive experience in the industry, Juan Carlos was the natural choice to assume the position of Head Baker. Drawing upon his years of expertise, he oversaw the bakery's production operations, ensuring that the establishment continued to produce the same high-quality baked goods that it had become known for.
